Words will never do justice to the sumptuous culinary delights Charmaine created for us. Suffering myself with numerous food allergies and intolerances, not to mention the diverse dietary requirements of our wedding party from Diabetes to Coeliac, Charmaine’s energy never faltered once, if anything her enthusiasm soared.

Charmaine has an exceptionally calm, warm and friendly disposition that her professional approach to everything not only puts you at ease but also fills you with such confidence that you can’t help but relax, sit back and enjoy the whole experience.

Canapé Menu

Mini Tartlets and Savouries:

Crumbed camembert bites with berry compote
Beetroot blini topped salmon gravlax, cream cheese, dill and avocado
Balsamic onion and pecan nut puff pastry tartlets
Wild mushroom and gorgonzola tartlets
Fresh tomato, basil and parmesan puff pastry tartlets
Caramelised onion, peppers and goats cheese puff pastry tartlets

Thai vegetable spring roll
Roasted butternut, baby marrow and feta samosa
Confit duck spring rolls with ginger, soy and coriander
Lamb, cinnamon and caramelised onion samosa
Prawn and mozzarella spring roll
Beer battered tempura vegetables or line fish
Trio of wontons (spicy pork and apple, chicken and cashew nut, stir-fried carrot and cabbage)

Steamed mussels in a garlic and white wine sauce
Baked camembert savoury crackers and poached figs

Mains:
Served with grilled seasonal vegetables and a potato and rosemary bake

Grilled line fish served with a salsa Verde and rustic tossed fine bean and almond salad
Seared Norwegian salmon with stir fried buckwheat noodles and a honey soy sauce
Confit duck leg served with a peach tarte tan and orange jus
Crumbed lamb rack served with a butternut muffin and brandy pine nut sauce
Grilled fillet served medium rare with a roasted mushroom jus, garlic cream and fresh basil
Venison loin with a spiced red (clove, cinnamon and citrus) wine sauce

Wild mushroom risotto with parmesan and truffle oil
Rolled aubergine filled with spinach and ricotta on grilled polenta and served with a tomato based sauce
